Bhopal Cuisine - Achari Gosht

This specialty is one of the famous attractions for food enthusiasts in Bhopal. Few can resist a dish that brings together tender cooked meat with pickled or achari flavors to excite the senses. The mutton is marinated with the aforementioned achari flavors; a blend of traditional spices such as turmeric, coriander, red chili powder, and ginger to name a few. Immediately after, it is stir-fried over a fire in mustard oil with sautéed onions, mustard and fenugreek seeds before being turned into agravy. In Bhopal, the tradition is to go spicier than normal, so be prepared! The meal is best enjoyed alongside some hot roti or naan and has been a staple in Bhopali culture for centuries.
